The bruschetta trio at Estancia 460 is delicious, complete with a shrimp version, a tomato version, and my favorite, a white bean puree. It inspired me to make my own.
Ingredients:
1 cup canellini beans
4 tbps extra-virgin olive oil
2 tbps tapenade
2 tbsps balsamic vinegar
1/2 tsp hot pepper flakes
1 tsp fresh rosemary
3 tbsps basil leaves
1 garlic clove
salt and pepper

1. Preheat broiler or grill.
2. Chop rosemary and basil.
3. Mash beans.
4. Mix beans, oil, vinegar, and spices. Season with salt and pepper.
5. Slice bread and rub garlic into the slices. Grill them.
6. Spoon the mixture onto the bread, drizzle with a little oil and serve.
