For years, I’ve had an ongoing battle with jalapeño poppers. They’ve held a dear place in the heart of so many boyfriends, and yet I’ve never quite managed to get over the curdling feeling in my stomach each time they are mentioned. During each popper feeding session, I’d always make note to come up with a recipe that would transform the flavors into something a bit more refined.
A few weeks ago, while perusing the website Use Real Butter, my questions were answered. The savvy Colorado native behind the blog had made goat cheese and cheddar croquettes, mixing in green chiles and dredging the spheres in cornmeal before pan-frying. It’s a brilliantly sophisticated yet unfussy answer to the old football Sunday stand-bys. I am yet to try this recipe but just reading it gets me in the mood to invite all my buddies over for a tasting.
